Worked examples, with the maths

Three made-up restaurants, so you can see how the numbers fit together. The figures are assumptions for illustration, not client results or quoted click costs.

A neighbourhood Indian restaurant

  1. £800 ad spend at £0.80 a click = 1,000 clicks
  2. 6% book or call = 60 bookings
  3. 3 people a table = 180 covers
  4. £28 a head = £5,040

£6.30 back for every £1 of ad spend

A city-centre steakhouse

  1. £1,500 ad spend at £1.50 a click = 1,000 clicks
  2. 5% book = 50 bookings
  3. 2.5 people a table = 125 covers
  4. £55 a head = £6,875

£4.58 back for every £1 of ad spend

A takeaway pushing direct orders

  1. £500 ad spend at £0.50 a click = 1,000 clicks
  2. 8% order = 80 direct orders
  3. 1 order each
  4. £25 an order = £2,000

£4.00 back for every £1, on orders that don’t go through a delivery app

The question that matters

Most owners ask what marketing costs. The better question is what a table is worth. Once you know that, you can judge any channel, any agency and any month properly.

How the maths works

Ad spend divided by your cost per click gives the clicks you can expect. Multiply by the share of clicks that book, call or order and you have bookings. Multiply by party size for covers, then by spend per head for revenue.

We then divide revenue by your total monthly cost, ad spend plus our fee if you add it, to show what comes back for every £1. Because revenue isn’t profit, we also apply your gross margin and show how many covers you need each month just to break even.

Guests who come back are where restaurants make their money. Add return visits and you can see what a year of a new regular is worth, on top of the first booking.

What you’ll need

Most of it is in your EPOS or Google Ads

  • Your monthly ad spend
  • Average cost per click, from Google Ads
  • How many clicks turn into a booking or call
  • Average party size, from your booking system
  • Average spend per head, from your EPOS
  • Your gross profit margin

Good to know

A planning tool, not a promise.

  • Revenue isn’t profit, so check the gross profit line
  • Results depend on your area, website, reviews and how fast you answer the phone
  • On a call we model it with real search volumes and click costs for your area

Questions

Is this what I’ll get?

No. It shows what your numbers add up to, not a forecast. Click costs and booking rates change by area, season and how good your website is. On a call we use real search volumes and click costs for your area.

Should I include your fee?

Yes, if you want the honest picture. Ad spend alone flatters the return. Add the plan you’re considering and judge it on your total monthly cost.

What counts as a good result?

Look at gross profit per £1, not revenue. Above £1 means the activity pays for itself before anyone comes back. Return visits are the upside on top.
